
Big Bloc
Established at the Centrale Agricole in the Ahuntsic-Cartierville district of Montreal, Big Bloc is an urban artisanal mushroom production workshop.
Coming from the restaurant industry, the founders of the workshop, Virginie Boivin and Gabriel Vallée, have a mission to promote the culinary and nutritional qualities of different mushroom varieties. They also aim to improve access to quality mushrooms for Montreal's city dwellers.
Big Bloc cultivates a variety of fresh mushrooms, but also develops several mushroom-derived products in their mycological laboratory. And there's no shortage of innovation: dehydrated mushrooms, mushroom-based spice blends, and fruiting substrate blocks are just a few examples of the products Big Bloc offers.
