Sunflower cultivation began at the Champy farm in the late 1990s, and the first bottle of oil was marketed in 2000. After more than 20 years in Upton, history is repeating itself, as 2021 marked the official transfer of the oil mill to Sainte-Christine, within the Améréquois farm. This new organic farm, in addition to producing oil, collaborates with the Savonnerie des Diligences d'Eastman to make derivative products. This is a renaissance for the Champy farm, which has seen its production increase over the years.

Sunflower oil is produced by cold-pressing sunflower seeds, filtering them through decantation, and then bottling them. Sunflowers, in addition to producing seeds, brighten the fields of Montérégie and bathe in sunlight, much to the delight of spectators who stop to watch. The rural landscape has been completely transformed.
