This recipe is an improved version of the classic brined bourgot found in most fish stores in Quebec. It is the meeting of both our culture and our nature.

The brine is infused with a wonder from our forests, myric balsam, which brings a scent of fir, slightly peppery, reminiscent of nutmeg.

Very pleasant to the bite and fresh in the mouth, this bourgot recipe is an ode to the northernness of Quebec.
