Helping Quebecers to rediscover the little-known products of our beautiful St. Lawrence River is the mission that the duo Emmanuel Sandt-Duguay and Guillaume Werstink gave themselves by founding Chasse-Marée in 2016.

Chasse-Marée is an artisanal cannery in Rimouski that advocates a local pantry. Rather than fishing for species already known and appreciated such as shrimp or lobster, the cannery instead leaned towards whelk as the first product to market.

Their whelk are fished responsibly, with a view to sustainability and respect for the biodiversity of the St. Lawrence and its communities.

Young producers are already standing out in the Quebec culinary and food world, notably by winning the “Prix Enhancement of Quebec Marine Products” at the Salon Fourchette Bleue in 2023.

What is a whelk?

Whelk is a fleshy, cream-colored mollusk with slightly black spots. It is a seafood native to the North Atlantic and proudly found in the cold waters of the St. Lawrence River.

Already popular in Europe and Asia, the founders of Chasse-Marée hope that Quebecers will rediscover the ancestral pleasure of savoring whelk through their delicious ready-to-eat products!
