Bean-to-bar definition
Directly imported from San Francisco, the term "Bean-to-bar" comes from English and literally means "from bean to bar." "Bean-to-bar" is defined as a place where the artisan (and not mass producers) takes charge of all the stages of making a chocolate bar from A to Z, starting with the roasting of selected beans, shelling, grinding, kneading, conching, tempering and molding. The work of the artisan is distinguished from chocolate making because the raw material is not chocolate but the bean itself.
